It is time for hatch chiles. I’m very lucky that my local grocery store roasts and sells them. This dip offers a change of pace from traditional guacamole or salsa. It is pretty easy to make because you just throw everything into the blender. The end result is a smooth, spicy avocado hatch chile dip that tastes great on a tortilla chip.
Hatch Chile Avocado Dip
- 1 avocado
- 1 hatch chile (roasted)
- 5 Tbsp. Rotel with lime and cilantro (use mostly vegetables and not juice)
- ½ tsp. garlic salt
- ¼ tsp. cumin
- ¼ tsp. lime juice
- Blend ingredients in a blender. Serve with chips.
