St Patricks Day Treats

ByJessica Wellington 3 Comments February 16, 2014

I love rice crispy treats. They are one of the best snacks in the world. Instead of making green rice crispy treats, I decided to do something a little more fun for St Patrick’s Day.

My daughter’s current favorite cereal is Lucky Charms. She loves the marshmallows. If she had her way, she would be able to eat a bowl of just the marshmallows for breakfast. I cant blame her. They are my favorite part of the cereal too.

I decided to make Lucky Charms Treats. I then decided to spread white chocolate on top of the treats. Since these are for St Patrick’s Day, I used food coloring to make the chocolate have a green tint. My daughter thought it would be awesome to use green sprinkles. This is totally optional.

These treats are amazingly good. They are a little different than rice crispy treats. If you love Lucky Charms, you will love these bars!

  • Green sprinkles (optional)

Instructions:

  1. Grease the pan with butter
  2. Over low heat, melt butter.
  3. Once melted add the marshmallows.
  4. Stir until melted.
  5. In a bowl, add the melted marshmallows to the cereal.
  6. Stir until combined. (You will get a work out stirring this mixture)
  7. Press the mixture into the pan.
  8. In the microwave, melt the chips on low heat in 15 second increments, stirring between each.
  9. Once melted, add 2-3 drops of green food coloring.
  10. Spread the green chocolate over the top of the treats.
  11. Allow the treats to set up for several hours. If in a rush, you can put them in the fridge to harden.
  12. Cut out the bars, flip them over and cover with green sprinkles.
