No Velveeta? No problem. If you need a quick appetizer, it doesn’t get any easier than this queso recipe. You might be surprised that Velveeta is not on the ingredient list for this queso. Trust me, you will still love it. 

All you need is a microwave, a can opener and three ingredients. I love super simple recipes that taste like I spent hours in the kitchen. This queso recipe is my go to for events, potlucks and any other special occasions.

This queso recipe is one that my Mom put together.  When I was growing up, we had a lot of get togethers at our house. She always made this dip. It was always a childhood favorite. I haven’t met anyone who hasn’t absolutely loved it!

The key to this queso, is the cheddar cheese soup. It comes in a can. It really takes the dip to the next level.

Queso Recipe

Ingredients:

  • 1 can of cheddar cheese soup
  • 2 cups shredded cheddar cheese
  • 1 & 1/2 cups of salsa

Instructions:

  1. Combine all of the ingredients in a microwave safe dish.
  2. Heat in one minute increments, stirring between. (Usually takes around 3-5 minutes total.)
  3. Serve immediately with tortilla chips.

If you want your dip to have a smooth consistency, you could blend the salsa ahead of time and then add it to the mixture.

You can drastically change the flavor and heat of this dip with the salsa. You can add a spicy salsa for a hotter dip. You could also use a chipotle salsa for a smokier flavor. There are many possibilities.

I love this recipe because it is so convenient. I always have cheddar soup and salsa in my pantry and cheese in my refrigerator. If I need a quick appetizer, I just throw this together. I like that I don’t have to make a special trip to the store for the ingredients.
