Matzo Breaded Chicken and Gravy Recipe

I’ve seen Matzo used a lot of different ways in recipes. I’ve never used it before and wanted to find a way to try it. So, I decided to use it as a breading for fried chicken. It was a nice change from using bread crumbs or flour. The chicken was really good and the Matzo made a really crunchy coating.

Matzo Breaded Chicken and Gravy Recipe
1 cup Matzo crumbs
1 tsp. seasoned salt
1/4 tsp. cayenne pepper

2 eggs
4 Tbsp. water

4-5 boneless skinless chicken breasts

Combine the crumbs, salt and cayenne in a bowl. Combine the eggs and water in a separate bowl. Dredge the chicken in the crumbs, then egg mixture and then crumbs again.

Cover the bottom of a cast iron skillet with oil and fry the chicken on medium until done. Remove the chicken and prepare the gravy in the same pan.

Gravy
1/4 cup flour
1/2-3/4 cup milk
1/2 tsp. cayenne
1 tsp. seasoned salt

Turn the heat to medium high and add the flour and whisk for a minute. Then add the milk, cayenne and seasoned salt. Cook until thickened. I like to put my gravy on the side. I also served this with mashed potatoes. It was a big hit with my family.
