Fried Pickle Chicken Recipe

Ok, I know what you must be thinking….pickle chicken-weird?  However, it is really good and a nice alternative to regular fried chicken. It has a unique flavor that will satisfy any pickle fan. I like to think of it as a cross between fried pickles and fried chicken. My toddler even likes it. I like to serve it with hot wing sauce and/or low calorie, low fat ranch .

Fried Pickle Chicken Recipe

Marinate chicken strips in dill pickle juice for 2-4 hours.

Prepare the batter:
Wet Ingredients
1 egg
1 cup skim milk
1 Tbsp. Worcestire sauce
5-6 drops Tabasco

Dry Ingredients
1 3/4 cups flour
1 tsp salt
1 tsp pepper
1 Tbsp cajun seasoning

Heat oil (peanut oil is our favorite) to 350. Coat chicken with dry batter, then wet batter, then dry batter again. Fry until golden brown.

Serve with hot wing sauce.
