Chili Cornbread Casserole

Chili Cornbread Casserole is a quick and easy meal option. Your family will love this unique dish!

Chili cornbread casserole is one of the easiest meals to throw together. Seriously. Even though it is incredibly simple, it tastes amazing.

Most people love to eat corn bread with chili. This meal incorporates the two into one dish for an incredible combination of flavors and textures.

This casserole is perfect for cold weather. But, trust me, it tastes great regardless of the weather.

Let’s talk about the chili. I don’t like beans in mine. It is a texture thing.

In this casserole, I used my family’s favorite type of chili: Cincinnati. We usually make it from the powdered mix you can buy at Kroger.

You can use your favorite chili recipe or a canned version.

As far as the cornbread goes, I used two boxes of Jiffy Corn Muffin Mix. I love this stuff because it is easy to prepare and it tastes delicious! To prepare the cornbread, I followed the package instructions.

Chili Cornbread Casserole Recipe

Ingredients:

  • 2 boxes of Jiffy Corn Muffin Mix
  • 2 eggs
  • 2/3 cups milk
  • 2 cups of prepared chili

Instructions:

  1. Grease a casserole dish.
  2. Combine the corn muffin mix, the eggs and milk. Stir until thoroughly incorporated. Set aside.
  3. Fill the bottom of the dish with the chili.
  4. Cover the top with the corn muffin batter.
  5. Bake at 400 for 20-25 minutes.

For an added variation, you can include a bag of frozen corn and/or cheddar cheese. Just mix those ingredients in with the corn muffin batter.

I like this meal because everything is included in one casserole dish. It is so easy and delicious. Your family will love this fun twist in the form of a casserole.
