Smore Cake Mix Cookies

I love to eat a smore. These smore cake mix cookies are super easy to make and taste just like the popular campfire treat.

If you’ve never eaten a cake mix cookie before, I encourage you to try one. Cake mixes make great cookies. This is especially true for chocolate cake mix.

smore-cake-mix-cookies-finalI like to make these cookies when my family wants smores but it is too hot to outside to roast marshmallows. These cookies are a great indoor alternative.

However, if you really want to make the classic version of the treat in your kitchen (marshmallows and chocolate sandwiched between two graham crackers), check out this post about indoor smores.

Also, this recipe is very kid friendly. You can let your child measure out ingredients and add them to the mixing bowl. Also, my daughter had a lot of fun breaking up the graham crackers and Hershey’s bars.

Smore Cake Mix Cookies

Ingredients:
-1 box Duncan Hines Dark Chocolate Fudge Cake
-2 eggs
-1/2 cup melted butter
-1/4 cup brown sugar
-1 tsp. vanilla
-6 graham crushed (but not pulverized)
-1 cup mini marshmallows
-2 bars of Hershey’s chocolate (the same kind you would use in s’mores)

Instructions:
-Preheat oven to 350.
-Combine the cake mix, eggs, melted butter, brown sugar and vanilla.
-Mix in an electric mixer until thoroughly incorporated.
-Add the crushed graham crackers and combine.
-Scoop out cookie dough onto a cookie sheet.
-Push a couple of marshmallows into each cookie.
-Bake for 10 minutes.
-After 10 minutes, remove the cookies from the oven and add pieces of Hershey’s chocolate to each one.
-Return cookies to oven for an additional 1-2 minutes or until the chocolate is melted.
