A few years ago, I came across something that changed my baking life forever. I used to make pie crust from scratch. It took several hours, involved numerous steps and refrigeration overnight. I used to dread making pie crust. It took so much time and effort just for the crust part of the pie, which isn’t even my favorite part.
Every Thanksgiving, I would begrudgingly follow the pie crust recipe in anticipation of our large family meal. However, all of that changed when I came across Betty Crocker Pie Crust Mix. While I was buying ingredients for my Thanksgiving meal, I saw the boxed pie crust mix on the end of an aisle.
On a whim, I purchased it and decided to take advantage of this shortcut during my preparations for Thanksgiving dinner. The first time I used it, I was worried about the outcome. I had a group of very outspoken relatives coming over for Thanksgiving dinner. At the head of this group, was one relative who thinks using anything prepackaged or out of a box is a crime.
When I served dessert, I waited on pins and needles as she tried the pie. When she told me her opinion, I almost dropped my fork. She said that my homemade pie crust is consistently good every year and this was no exception. Here, all these years, I had worked for hours making the crust from scratch when I could have been using the prepackaged mix!
Needless to say, I haven’t looked back since. I just make sure the Betty Crocker Pie Crust Mix box has done a disappearing act before my guests arrive. Betty and I make a great team during the holiday baking season and I’m sure she doesn’t mind it when I take all the credit.
