Low-Fat Pumpkin Cake
- 1-15 oz. can pumpkin
- 1 angel food cake mix (the kind that only requires water)
- 1&1/2 cups water
- 1 tsp cinnamon
- Mix ¾ of the can of pumpkin with the water and cinnamon in a large bowl.
- Add the cake mix and blend for 30 seconds on low and 1 minute on medium.
- Fold in the rest of the canned pumpkin. Pour the batter into a loaf pan.
- Bake at 350 for 35-40 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
- When it is done, take the loaf pan out of the oven and put it on its side until it is cooled.
- Then, take the cake out of the loaf pan and place it on a plate.
