Microwave Double Chocolate Espresso Brownies
 
Ingredients
  • ¾ cup sugar
  • ¼ cup brown sugar
  • ¼ tsp. salt
  • ¾ tsp. vanilla
  • 2 eggs
  • 2 Tbsp. espresso
  • ½ cup melted butter
  • ¾ cup flour
  • ½ cup cocoa
  • 1 & ½ cups mini chocolate chips
  • ¼ tsp. baking powder
Instructions
  1. Beat sugars, salt, vanilla and eggs until combined.
  2. Add melted butter. Mix until incorporated.
  3. In another bowl, mix flour, baking powder and cocoa.
  4. Add the flour mixture to the wet ingredients.
  5. Mix until combined.
  6. Add ½ cup of mini chips to the batter. Stir to incorporate.
  7. Grease an 8 inch glass dish
  8. Pour the batter into the dish.
  9. Microwave on high for 5-6 minutes.
  10. Remove from the microwave and pour 1 cup of mini chips on top of the hot brownies.
  11. Once melted, spread over the top of the brownies.
