Microwave Double Chocolate Espresso Brownies
- ¾ cup sugar
- ¼ cup brown sugar
- ¼ tsp. salt
- ¾ tsp. vanilla
- 2 eggs
- 2 Tbsp. espresso
- ½ cup melted butter
- ¾ cup flour
- ½ cup cocoa
- 1 & ½ cups mini chocolate chips
- ¼ tsp. baking powder
- Beat sugars, salt, vanilla and eggs until combined.
- Add melted butter. Mix until incorporated.
- In another bowl, mix flour, baking powder and cocoa.
- Add the flour mixture to the wet ingredients.
- Mix until combined.
- Add ½ cup of mini chips to the batter. Stir to incorporate.
- Grease an 8 inch glass dish
- Pour the batter into the dish.
- Microwave on high for 5-6 minutes.
- Remove from the microwave and pour 1 cup of mini chips on top of the hot brownies.
- Once melted, spread over the top of the brownies.
