The Best Tomato Soup
 
Ingredients
  • 5 large tomatoes chopped
  • 1 onion chopped
  • 1 clove garlic chopped
  • 2 Tbsp. olive oil
  • 1 Tbsp. flour
  • 1 tsp. sugar
  • ½ tsp. Italian seasoning
  • ¾ tsp. salt
  • 1 parmesan cheese rind
  • ¼ cup half and half
Instructions
  1. Heat oil and sautee onions and garlic until translucent.
  2. Add flour and cook until thickened and bubbling
  3. Add tomatoes, sugar, Italian seasoning and salt.
  4. Add the parmesan rind.
  5. Reduce heat and simmer 15 minutes.
  6. Add half and half and stir until combined
  7. Remove rind.
  8. Puree in blender.
  9. Garnish with fresh basil.
