The Most Delicious Mexican Street Corn
- 6 ears of corn
- 1 Tbsp of cajun seasoning
- 2 Tbsp. of oil
- ¼ cup parmesan cheese
- ¼ cup sour cream
- ¼ cup butter
- ¼ tsp. lime juice
- 1 dill pickle finely chopped
- Preheat a grill pan over medium heat.
- Lightly rub the corn with oil.
- Sprinkle with cajun seasoning.
- Cook over medium heat for 8-10 minutes.
- Rotate the corn to get grill marks.
- Sprinkle each ear of corn with parmesan cheese.
- Slightly melt the butter.
- Combine with the sour cream.
- Add the lime juice.
- Stir in the finely chopped dill pickle.
